Celebrating Autumn Part 2

I’ve made a few more pumpkin recipes lately.  Some worth sharing.  Some not so much.  Pumpkin Scones- 3.5 stars, Pumpkin Apple Butter 4 stars (see recipe below), Golden Herb Rolls 2 stars, and Pumpkin Cookies 5 stars (seriously try these).

Pumpkin Apple Butter

1 3/4 cups (15 or 16 ounce can) Libby’s Solid pack pumpkin (I actually used fresh)
1 cup apple juice
1 cup peeled and grated apple (about 1 medium)
1/2 cup packed brown sugar
3/4 tsp pumpkin pie spice

Combine in 2 quart saucepan.  Bring to a boil, reduce heat.  Simmer, uncovered, for 1 1/2 hours, stirring occasionally.  Cool thoroughly; transfer to a covered storage container.  Store in refrigerator for up to 2 months.  Makes 3 cups.

Very easy, especially when you use canned pumpkin, which I will try next time.

are those the cookies in the picture?? i’m going to have to do some fall baking. we don’t eat dessert except on sundays, but i think we may have to start!!!

Those are the scones. Only on Sundays! I don’t know what I’d do! Lose 10 pounds I guess!
